MAKES 2-4 PORTIONS


450 G (1LB) potatoes, peeled and cut into chunks
26 g (1 oz) butter
1 large spring onion, finely chopped, or a handful of snipped chives
65 g (2 1/2 oz) plain flour
a little salt and freshly ground black pepper
Topping
3 medium tomatoes, thinly sliced
70 g (3 oz) Mozzarella cheese, sliced
a handful of chopped basil or a pinch of dried oregano
26 g (1 oz) Cheddar cheese, finely grated

Potato Pizza

"These scrummy pizzas have a tasty mashed potato base which is lovely and soft. For fun you can decorate the pizza to look like the face of a clown with cucumber eyes, a cherry tomato nose and a strip of red pepper for the mouth "

Boil the potatoes until tender, then mash with the butter. Mix in the chopped spring onion and the flour, and season with a little salt and pepper. Using floured hands, shape into two round pizza bases about 13 cm (5 inches) in diameter, and place on a greased or lines (with non-stick baking paper) baking sheet. Bake in an oven preheated to 200c/400f/Gas 6 for about 15 minutes or until the edges become a little crispy. Arrange the tomatoes and mozzarella cheese slices in overlapping circles on top of the pizza. Sprinkle with the basil or oregano and scatter the Cheddar cheese on top. Sizzle under a preheated grill until golden

Hamburger Heaven

"These hamburgers are deliciously moist, and they are particularly good on a barbecue. You can also try making the tomato sauce topping which might help wean your child off the tomato ketchup which tends to be dolloped on so much children's food, so that everything ends up tasting the same. Use a half quantity of the tomato sauce shown below, then pour into a casserole, over six of these hamburgers. Cover with 75 g (3 oz) Mozzarella cheese sliced, then bake in an oven preheated to 180c/350f/Gas 4 for 20 minutes "

Combine together all the hamburger ingredients except for the oil or margarine, form into 12 small hamburgers and fry in shallow oil until nicely browned and cooked through. Alternatively, dot with a little margarine and grill, turning halfway, until cooked through.

Home-made Tomato Sauce

" Tomato sauce with pasta is an all-time favorite with most children. I always make more than I need and store some away in plastic containers in the freezer. It's also good as a sauce for meat or chicken balls or vegetarian rissoles and is an excellent disguise for getting you child to eat vegetables!"

Saute the onion and garlic (add extra vegetables if using) in the oil until softened. Add the tomato puree and saute for a couple of minutes. Stir in the chopped tomatoes and the herbs, and simmer, uncovered, until the sauce thickens, about 15 minutes. Season to taste with sugar, salt and pepper.

MAKES 12 HAMBURGERS

450 g (1 lb) lean minced beef
1/2 onion, grated
1 Granny Smith apple, peeled and grated
1/2 chicken stock cube, crumbled
2 tablespoons breadcrumbs
15 ml (1 tbsp) cold water
a little salt and freshly ground black pepper
vegetable oil or margarine

MAKES ABOUT 900 ML (1 1/2 PINTS) TOMATO SAUCE

1 onion, chopped
1 garlic clove, crushed
15 ml (1 tbsp) olive oil
30 ml (2 tbsp) tomato puree
2 x 400 g (14 oz) can of chopped tomatoes or 1 x 800 g (28 oz) can of peeled tomatoes
a handful of fresh parsley, chopped
or 5 ml ( 1tsp) dried marjoram or oregano
2 g (1/2 tsp) sugar
a little salt and freshly ground black pepper (not before 1 year)

MAKES 1 PORTIONS


1 banana
15 ml (1 tbsp) cottage cheese ( cottage cheese with pineapple)
45 ml (3 tbsp) of a variety of fruits cut into small cubes

Banana split

"This is a simple to make and very healthy to eat. It looks attractive laid out on a plate, especially if you include some ore exotic fruits like kiwi and mango. Remember to peel and cut the banana at the last moment or it will turn brown "

Peel the banana and split it in half lengthwise. Lay the two halves on a plate to make a circle with the ends touching one another. Pile the cottage cheese in the center of the bananas and scatter the chopped fruit on top.

CREAMY CHICKEN RISOTTO

" Conjure up a quick risotto with the breast of chicken and a can of condensed cream of chicken soup. For a vegetarian risotto, omit the chicken and use a can of condensed mushroom soup."

Melt the butter or margarine in a deep frying pan and saute the onion and the pepper until soft. Add the chicken and saute, stirring regularly, for 3-4 minutes. Add the rice and stir it around the pan until it is well coated. Mix in the soup. Fill the soup can with water, add, and simmer, uncovered, for 30 minutes, stirring occasionally. About 5 minutes before the end, add the frozen peas. Season to taste.

MAKES 5 PORTIONS

26 g (1 oz ) butter or margarine
1 small onion, finely chopped
1 small red pepper, seeded and diced
1 chicken breast, skinned and boned, cut into small pieces
175 g (60z) long-grain rice
1 295 g (10.4 oz) can of condensed cream of chicken soup
75 g (3 oz) frozen peas
a little salt and freshly ground black pepper
